Mas Tacos & Tragos, Por Favor!
If you live in the Broadmoor neighborhood, chances are that you are already familiar with the Galvan family. For the better part of the last decade, the Galvan’s have been the heart and soul behind Miguel’s Mexican Bar & Grill (formerly Carlos & Miguel’s). With Everardo Senior managing the restaurant, while the rest of the family has upheld every other level of service possible.
After a decade of “on-the-job-training”, The Galvan’s shot their shot, and the hard working, band of Los Angeles natives took the city by storm with Por Favor Tacos & Tragos!
But the inspirational story behind Por Favor is arguably even better than the amazing food that comes out of the kitchen.
Beautifully plated tacos are the main attraction at Por Favor.
Before Por Favor, There Was a Lot of Hard Work
The Galvan family came to Colorado Springs from Southern California, carrying with them a dream of eventually building a restaurant of their own.
But, like most tales, theirs wasn't exactly an overnight success story. They spent years grinding over hot kitchens and disgruntled guests and even endured a global pandemic that would have convinced most sane people to steer clear of the increasingly tumultuous restaurant business. Thankfully for all of us, the family persevered.
The Galvan’s history and love of the industry stretch back years. Everardo Galvan Sr. spent much of his career working in restaurant management, including a long stint as the aforementioned general manager at Carlos & Miguel's. His wife, Maria, sons, Everardo Jr., Yuriam and Edgar, along with their sister Areli, all spent years working at Miguel’s in various capacities, including bartending and serving.
But, the Galvan’s weren't simply earning a paycheck. They were learning. And eventually, all of those lessons would become the foundation for Por Favor.
Sleeping in a Car, Working Toward a Dream
One of the most remarkable parts of the Galvan story is what Everardo Sr. and Everardo Jr. endured when they first came to Colorado.
As Everardo Junior, will tell you… the two showed up for work at a Miguels with essentially the clothes on their backs. After finishing their first shift, they looked at each other and wondered the most basic question imaginable:
Now what?
They didn't have a home. So they slept in their car.
From there, they worked, saved, and eventually found an apartment with roommates… And not just one or two roommates. Twelve! Having the same name helped as they even shared a gym membership so they could shower.
They sent money back home whenever they could, working toward the day when the rest of their family could join them in Colorado.
Eventually, the family reunited and the Colorado adventure began!
Colorado Springs Discovers Por Favor
The first Por Favor opened at 4657 Centennial Boulevard in the summer of 2024, and it didn't take long for people to notice.
The concept was straightforward enough: Mexican street-style tacos, traditional flavors, homemade salsas, cocktails and a fun, energetic cantina atmosphere.
Por Favor describes itself as a family-owned taco cantina built around authentic Mexican tradition and a festive atmosphere. The family emphasizes making its food from scratch, including its salsas, marinades and cocktail purees.
Birria quickly became one of the restaurant's calling cards. The slow-cooked beef, melted cheese, cilantro and onions are served alongside consommé, creating the now-famous taco-dipping experience.
The Birria options are both abundant and amazing!
It's Not Just About the Tacos
Walk into Por Favor and you'll quickly realize the family understood something important… People don't just go out to eat… They go out to have an experience. The restaurant's bright, playful atmosphere, neon signs, colorful drinks and lively energy give it a personality that matches the food. When asked about their inspiration, Everardo Junior is quick to tell you that they spent hundreds of hours combing through Instagram and other platforms, searching for ideas that they could mold into their own.
And then there are the tragos!
Margaritas, as you can imagine, are a major part of the experience, with options ranging from classic lime to strawberry, pineapple, mango, cucumber and guava. The restaurant even offers margarita flights for those who can't make up their mind. In fact, Por Favor was the recent winner in our city-wide Local’s Choice: Best Margarita Competition!
Don’t sleep on the Tragos options, the Margaritas are exceptional!!
The name itself is part of the fun. "Por favor" means "please," while "tragos" is commonly used for drinks or cocktails. Put the two together and you get a name that is memorable, playful and completely fitting for the concept.
Doubling Down!
And now, just two years after opening its doors, the Galvans have doubled their footprint.
The second Por Favor opened at 13395 Voyager Parkway in 2026, giving the family a north-side location while keeping the same menu, size and experience.
Here in Colorado Springs, we love an inspirational story, and Por Favor has become a living legend in a very short amount of time. That's a pretty remarkable trajectory for a family whose journey in Colorado began with two people sleeping in a car!
