Pig Latin Slaps!
Hidden in an unassuming shopping center on the north side of Colorado Springs, Pig Latin has quietly built one of the most loyal followings in the city by doing something surprisingly rare: serving bold, creative food that actually delivers on the hype.
From the moment the first plate hits the table, it becomes obvious why this place has become such a staple in the local food scene. The flavors are loud in the best possible way, smoky pork, sweet plantains, bright citrus, rich sauces, and enough Caribbean influence to make every bite feel like a quick vacation. Their famous Island Tacos deserve every bit of praise they get. Built around crispy shells, mojo pork, island sauce, and sweet-savory balance that somehow stays perfectly controlled, they are the kind of tacos people crave days later. The Guava Lava taco and chimichurri shrimp tacos push things even further, mixing Latin comfort food with street-food creativity that feels distinctly Colorado Springs.
The maduros, crispy chicharrones, stacked arepas, and street corn all carry the same attention to texture and seasoning that makes the kitchen stand out.
