Stellina Pizza Cafe, an establishment by the Blue Star Group, opened in May 2020 within the historic Middle Shooks Run neighborhood of Colorado Springs. The building itself boasts a long local history, having operated as a market since at least 1910, and its renovation preserved historic features such as the original white pressed tin ceilings and natural wood floors. The menu’s foundation is built on authentic Roman traditions, inspired by a research trip to Italy conducted by the owner and Chef Will Merwin. Stellina specializes in Roman-style pizza, which is known for its rectangular shape and a meticulous three-day proofing process using their house sourdough starter, affectionately named "Lucy".
Beyond their signature pizzas, which include the Dar Poeta and the arugula-topped Rocket pizza, Stellina’s kitchen also prepares scratch-made pastas using a simple combination of Semolina flour, water, and salt. Diners can also enjoy house-made sweet treats like limoncello and gelato. The restaurant operates under the Italian motto “Riportare il quartiere!” which translates to “Bring back the neighborhood”. They fulfill this mission through “Community Constellations” events, where 10% of dine-in sales are donated to local non-profits and schools. With a casual, modern atmosphere, Stellina serves as a beloved hub for locals, cyclists, and families, earning recognition from local publications for its quality ingredients and welcoming, non-stuffy service.
